Minced lamb (and tail fat, if you're going authentic) mixed with red pepper paste and hand-kneaded until almost elastic in texture, pressed onto wide flat skewers and grilled over charcoal until charred and juicy. Served with sumac-dressed onion and flatbread. One of the world's great kebabs, full stop.
